At the holidays at home, I do more than serve the bruschetta appetizer because Belle mom never forgets to shed light on my couch.
Also, my son is allowed to sit on the couch with a glass of wine. And this ban, it does not come from me, but my whole family knows, like me, he will reverse his qu'irrémédiablement glass of wine in any first or third glass: as sure as Christmas is December 25. Noooo! this is not just a few drops that escape from his glass, but almost all the content that splashes into a fine rain, dozens of places, not just my sofa, but for sure the clothes of the person sitting beside him.
And then suddenly the conversation took another turn: spotting. And it's probably because of all that one day I decided to present my starters "at risk" in pretty little bowls of bread that I make, with the application, just days before Christmas each year! Here is the recipe to achieve, among others, a delicious couch (!) Which is now part of the tradition in my family!
Minicoupe shrimp, capers and dill
For 20 Minicoupe:
5-7 slices white bread (white bread sandwich square is ideal because it is thin) 1 tbsp soup (or little) olive oil 26 capers
in vinegar, drained
quarter cup (50g) light mayonnaise (this is what I took, but the regular mayo is correct) 2 tablespoons
tsp fresh dill, chopped finely 1 tbsp
teaspoon lemon juice
1 / 4 c. teaspoon freshly ground black pepper
5 thin slices of smoked salmon (or 40 small shrimp, as the Matane shrimp)
1 piece of 3 inches (8 cm)
English cucumber fresh dill for garnish
Remove crusts from bread slices. Using a rolling pin, flatten the slices of bread. With a punch of 2 inches (5 cm) in diameter, cut into slices 20 slices of bread and go back to the roller really flatten.
Using a brush, brush the sliced bread on both sides with oil. Put minimuffins in a pan, not oiled, pressing firmly with fingers to give them a nice little cup shaped.
Bake in center of preheated 350 degrees F (180 degrees C) for 12 minutes or until bread is golden and crisp. Immediately unmold the bread slices and let cool on plates. (You can prepare in advance Minicoupe and put them in an airtight container or freezer bag. They will keep for up to 5 days at room temperature and up to 1 month in freezer. Just before serving, reheat in oven give them a little crispy.)
Book Capers 20. Coarsely chop the remaining capers (capers or 6) and place in a small bowl. Add mayonnaise, dill, lemon juice and pepper. Mix with a fork.
If using salmon, cut slices of salmon into strips of 1.5 x 0.5 in. (3.5 x 1.25 cm) and roll them in order to give them as a rosette. Cut the cucumber into quarters lengthwise, then thinly sliced. (You can prepare the mixture of mayonnaise, shrimp or salmon, and cucumber in advance and cover. They will keep up 8 hours in refrigerator.)
Put about ½ c. Tea preparation for mayonnaise in each Minicoupe bread. Add a rosette of salmon (or 2 shrimp), 2 slices of cucumber, capers and a sprig of fresh dill 1.
