INGREDIENTS FOR 1 CAKE:
- 2 rolls of puff pastry (the bravest of them will even ... well ... it s'la)
- 2 + 1 egg yellow gilding
- 100g sugar
- 150g almond powder
- 50g butter
- 10g cornflour
- 100 ml milk
- 1 teaspoon almond extract bitter
- 1 case of orange flower water
- Prepare the custard: In a saucepan, beat eggs and sugar. Dissolve the cornstarch in the milk and add to mixture. Turn on the heat and cook gently, stirring constantly with a whisk until the mixture thickens a lot.
- Transforming custard almond cream: Remove pan from heat and add the ground almonds, almond extract, water and orange blossom the butter. Mix well.
- Assemble tart: Book the frangipane in a cool (even in the freezer). Unroll the 2 puff pastry. On the first (the one below), brush the edges with egg yolk and 1 cm (2 to weld pastes. On the center, place the cream without spread it, if it is cold, it will be held. Then (the most difficult for my liking!) Cover dough with 2 nd, and it is much focus and aim well .. Press gently to adhere the center outwards to remove air. Solder the edge with the back of a knife or fork. You can decorate the top of the cake into diamond shapes with the drawing back of a knife. Then the cake is golden yellow and with it gives it a cool time that the yellow and then dry the golden again.
- Baking: Bake for 40 minutes at 200 °, covering with foil if necessary aluminum, laminations burns quickly.
I like the brilliance of the cake when it is brushed out of the oven with a warm sugar syrup (I Melt 4 tsp sugar 2 water and I painted).
